2 days in and many swear words later, it looks like we have solved the Book Fiasco.
*symptoms*
1. Tried to make a simple Custom Hardcover book using mpix press.
2. Had "Java Heap errors" all over the place, could not see the cover, could not export, could not upload to mpix.
3. Molly and I went back and forth trying a few things, Tech suggestion of editing the info.plist file was the culprit.
4. As there are no instructions on how to do this, I thought I should share what I did, if any of you have the same nightmare I did.

Solution that worked for me, and allowed me to upload the book to mpix. Again. Remember, this is on a new IMAC, (NOT a PC). I'm sure all you PC people have to trouble.

Okay this is Madness, but I think we got it.

The file the tech spoke about was in no way like the PC file... I think I just saved you 50 hours of troubleshooting...
1. Control Click MPIX BOOKS program icon, click "SHOW PACKAGE CONTENTS"
2. Open "Contents" folder.
3. Open "Info.plist" in the Apple "textedit" progroam.
4. Scroll Down to the Eighth (8th) line from the VERY BOTTOM OF THE FILE.
5. WIll look like THIS ====> <string>-Xmx2002000000 -Dapple.laf.useScreenMenuBar=true -Dcom.apple.macos.useScreenMenuBar=true -XX:+JavaMonitorsInStackTrace -
HERE IS THE FIX. !!! The number should say Xmx512000000 when you open the file.
CHANGE THAT NUMBER TO Xmx2002000000
You change the 51 to 200. I have no idea why this works, what it does, or if I just ruined the internet (haha), but all I know, is that it worked.
SIIIIIIIIIGH... 2 days of lost work.. but now I know we can fix this,
