The faster the turn around, the more emotional ties they have to the event and thus to the images. Customers want to share their images with family and friends as fast as possible while the "iron is still hot". Wait to long and the excitement wanes and thus do the sales.
Besides, if you can do them quickly but you hold on to them for a while, to me, that is a disservice to the customer. Would you want someone doing that to you?
My turnaround for a wedding is usually one day, two at the most. And yes, I have been known to stay in my office till 6am the next morning to get that accomplished.
I have only had one wedding that took me more than my usual and that was my wedding from hell. I had zero desire to do that wedding to begin with and it showed in the turn around.

I'm not really a photographer, I just play one in real life.
Believe it or not, on some planets, I'm actually considered normal.
I'm only dancing in this world for a short time. -Cat Stevens-
